Saving Time and Money on Food – Quick Recipe

I have recently found a quality yet easy and fast recipe, a simple beef curry, that saves me time as a working Mum and it has become a favourite with the family.

In Woolworths I buy a large single, whole piece of eye fillet steak – expensive? Yes, a bit. It costs anywhere between $30 – $40 depending on the size but with the recipe below I turn this into either 2 or 3 meals that feeds a family of 4 which I think is pretty economical and yet I am using the best cut of meat available.

Every Sunday in preparation for the working week ahead I prepare the following; I cube the meat (I like smaller cubes but if you like chunky, just cut that way) and brown in a large frying pan, takes about 5 minutes. I then add a packet of gluten free and non GMO curry paste that comes in a packet I buy at Woolworths. It is called ‘Passage to India’ – Tikka Masala – Simmer Sauce. I find this is the best curry sauce.

I stir this into the cubed beef and then let simmer gently for about 10 minutes. As the eye fillet is so naturally very tender, it doesn’t need more time than this. I divide into three portions and freeze.

During the week

During the week, after a busy day at work, I come home and place one of the frozen curries in the microwave on defrost. Whilst the meat is defrosting, I cube potatoes and boil. When both are ready i.e. beef defrosted and potatoes cooked, I stir gently together and heat gently over the cooker letting the beef curry sauce coat the potatoes. I also cook up some frozen beans or peas (must have your greens!).

I boil some rice and serve the dish with rice, curry, beans and a dollop of fat free yogurt on top. On the night after a busy day at work – it takes about 30 minutes. The family love it ! PS To stretch the meat even further, add a can of tomatoes to the beef. Along with the potatoes and greens – there is always plenty. This is how I stretch the cost of the beef into three meals.

PPS You can also use chicken but I prefer the Korma curry with this – also ‘Passage to India’ packet.
